Simple baked goodies from Dainty Restaurant

Dainty Restaurant is among the famous old school Chinese restaurants in Iloilo City. Aside from serving their specialties in their mezzanine floor they also have this snack house in the ground floor that is combination of a turo-turo, short order, bakery and take out store. Taking almost centerstage in this part of their store is a display of baked goods and here's a batch of their "tinapay" I bought days ago for the purpose of blogging first before gastronomic pleasure.
I just love their hopia monggo especially when hot off the oven or just came from the microwave. It's not your usual looking hopia yet tastes much better for me. It's a monggo-filled flattened flaky bread if it can't be considered as hopia. Though this one wasn't as good as the ones I had before.
Just the usual hopia baboy made bigger and better. It has the more recognizable hopia look and filled with teh same "baboy" filling we all are familiar with.
What can I say but they have the best looking monay and better tasting too.
Simple as it may seem, this pan de leche is among the best I have evert tried. Big and compact, you get your money's since it's not airy as the others and usually retains this perect shape even after a few days. Perfect for sandwiches of any kind or just on it's own!
One of the biggest panchos or pan de coco I have ever seen. I love it when it usually crips on top then soft and chewy in the middle. Plus the yummy desiccated coconut filing, what more can you ask for!
Lastly, the teren-teren - named after how these filled breads are connected like train cabooses. Just simple breads with sweet filling and best eaten when right off the oven.
One last look at these simple treats from Dainty and it makes me hungry now.

Ultimate Ilonggo Favorite: KBL Kadyos, Baboy, Langka

K.B.L. or Kadyos, Baboy, Langka is the ultimate favorite dish of most Ilonggos. It is also one of the most missed native dishes as kadyos and the souring ingredient, batwan , are hard to find when outside of the Ilonggo region.  Basically, it is boiled/stewed pork dish owing its "deliciousness" to the combination of the soft and tender pork, the tamed sourness of  batwan  and the  malinamnam na sabaw .  One of the "secrets" of the malinamnamn na sabaw , is the fact that the pork, whether just the plain meat or pata (hocks) are first grilled or broiled. Bitso-bitso

What is bitso-bitso ? Also spelled/called bichu-bichu or bitsu-bitsu , this native delicacy is made with fried rice flour dough then coated with coconut cream and muscovado sugar syrup. Its like a combination of making palitaw and banacue . The rice flour based "dough" is usually twisted and deep fried. Then it is placed/cooked in a mix of muscovado sugar then dried out. The sugar then "re-crystallize" making a crisp coating for the fried rice flour. The result is a local delicacy that crisp and sweet in the outside yet chewy inside.  Cooking bitso-bitso is done many different ways and with different mixes of ingredients. These particular ones in Santa Barbara, Iloilo are still crisp even after being exposed - they are peddled every afternoon around town for 5 pesos a piece.
