Home-made Mango Pasta

It took me just around twenty minutes to concoct this mango pasta from all the Noche Buena and Media Noche left overs I found inside the fridge. I was looking for something to eat then all of a suddent seeing some left over spaghetti had my thoughts clouded with so many possibilities. The mango pasta was just a last minute inspiration upon seeing a lot of mangoes on the table.
So I took ripe mango and squeeze it all out with my bare hands. Then I mix evaporated milk, cream and some powder seasoning (since I can't find some cream of corn soup and the likes  mixes) to give flavour at the same time balance the sweetness of the mango and the creaminess of the dairy. Then I got ham slices and quickmelt cheese nd mixed them all together before putting the sauce mix into the microwave. Yup it's basically a no-cook recipe since is just made from left overs.
It's the aroma of mangoes you'll encounter first so that makes your taste buds ready for the sweet encounter. But then the sweetness turn into creaminess as you then able to taste the concoction of the cream, milk and cheese. Finally some hints of saltiness from the seasoning, ham and cheese. I am not an expert on herbs so I didn't bother putting some for it might create a circus of flavours.

Though there's still room for improvement. Maybe I can use mango ketchup or mango barbecue sauces to give dimension. Or I can blend the sauce for evenness and/or saute the sauce  plus add some herbs.

In the end my home made mango pasta was a success (it was palatable-LOL) but the fact that I just threw in everything  I saw and just like a conductor for an orchestra I (kinda) created a symphony of flavours.

K.B.L. or Kadyos, Baboy, Langka is the ultimate favorite dish of most Ilonggos. The gabi (taro) is just one of those plants which is edible from "roots to tops". The most popular of which is the tuber part which is used in a variety of dishes and mostly in combination with coconut milk.
