Bourbon Street's treat for a bloggers meet

It was a very satisfying (and gratifying ) meet at Bourbon Street today as I met up with Marc (ExploreIloilo), Alvin (OhMyIloilo) and Junn (Gigsilonggo) for lunch. It was during Tinapayan's Chocolate Festival launch last Sept. 28, 2009 that this Bourbon Street treat was planned ( with some postponements in between) and finally pushed through today.
Over the restaurants best sellers and out-of-curiosity orders we wasted no time taking photos, talking and of course eating our hearts out. But as bloggers, we had first to go through our hunger first just to take shots of what's on the table since they came atdifferent times. But it was all worth it, the photos and the food.
Marc really wanted try the 15-hour Pork Belly but after ordering we were informed it wasn't available so we asked for suggestions from our food server and he suggested the Snapper Florentine. I also had one order in mind; Buffalo wings, since I have to taste test this again. I remember criticizing this last year when I had dinner here with Marc and Lee - lol. I had no idea that Sir John managed to find that post and eventually decided to tweak (okay change) the recipe, so that's why we got it. Also somebody commented in one of my blog entries about Bourbon Street's pizzas being one of the best, so another curiosity order - House Special Pizza. Completing our lot was Grilled Chicken Pesto pasta as suggested by Alvin and of course, any visit to Bourbon Street would not be complete without having their racks of Ribs.

After this sumptuous meal, we had these desserts, Million Layer Cake and Walnut Turtle Pie, to cap it all off. Today was another ordinary day made special not because of the food but of the presence of each one, who in his own little way contributes somethingfor our beloved Iloilo.

Bitso-bitso

What is bitso-bitso ? Also spelled/called bichu-bichu or bitsu-bitsu , this native delicacy is made with fried rice flour dough then coated with coconut cream and muscovado sugar syrup. Its like a combination of making palitaw and banacue . The rice flour based "dough" is usually twisted and deep fried. Then it is placed/cooked in a mix of muscovado sugar then dried out. The sugar then "re-crystallize" making a crisp coating for the fried rice flour. The result is a local delicacy that crisp and sweet in the outside yet chewy inside.  Cooking bitso-bitso is done many different ways and with different mixes of ingredients. These particular ones in Santa Barbara, Iloilo are still crisp even after being exposed - they are peddled every afternoon around town for 5 pesos a piece. Budyawi

Bujawi (budjawi, budyawi) is what Ilonggos refer to the fruit of the buri or century palm tree . Abundant in many parts of the province of Iloilo, the buri has many many uses from the leaves to its trunk. It produces a fermented drink (tuba), alcohol, vinegar, syrup, and sugar. The trunk yields large quantities of starch. The bud (ubod) is used for salad or as a vegetable. The kernels of the young fruits are edible and are made into a sweetmeats. The mature seeds are used for beads? (rosaries) and buttons.  The petiole yields so-called buntal fiber of which, the famous Baliuag and Lucban hats are made, or which, when crudely extracted, is sometimes twisted into rope. Mature leaf is used for covering tobacco bales, rarely as a thatch for houses, while the ribs are used for making brooms. From the unopened leaf is obtained a very fine fiber, corresponding to raffia fiber, which is utilized in making cloth, fancy articles, and as string. Fibers ...
