I’ve only been dreaming about Frozen Brazo ever since when it became a staple feature in most food magazines. There I got curious how it can be frozen when it’s just meringue and that creamy filling.

Tinapayan Bakeshop has been making Frozen Brazo, as well as ice cream cakes for years now. But it was only recently that I finally got to see what it really was. Finally, I now know what makes it a Frozen Brazo – a layer of vanilla ice cream squeezed in.
It comes in a standard deep microwaveable container for convenience. The top layer is a heavy set meringue where you can actually bite into it and not just melt in your mouth. Next layer is the brazo cream filling we’re all familiar with but as this is frozen, it has this new texture and icy dimension which makes it even more appetizing.
Then comes the layer what makes it a “Frozen Brazo”, delectable vanilla ice cream. It’s like a cross between the meringue and the brazo filling in texture and well, it’s ice cream, it sure to be one good aspect to this indulgent dessert.
The three layers are set on a final graham crust that echoes the top layer in color at the same time contrast in texture. Now that’s four layers of pleasurable cool and delectable treat coming from Iloilo’s premiere bread, desserts and sweets shop – Tinapayan.
