Beef Liver: Bistek, Sisig and Cajun-style

There seems to be a beef liver festival in some restaurants in Iloilo City in the last few months. Almost every week, I see new beef liver dishes being advertised and I just couldn't say no these delectable gastronomic creations. To start with, there's Beef Liver with Tagalog Sauce at Bauhinia Filipino Cuisine . Almost like the beef steak or bistek , so to speak, its taste is easily recognizable thus making it deliciously familiar. The sweet and sour mix of flavors in the sauce plus the caramelized onions blends just right with the taste of the liver.   Here's another liver dish cooked in a very familiar way - Sizzling Sisig . A perfect pulutan whenever you find your self at Floyd's Famous BBQ  restaurants, but as for me, its a viand with garlic rice. Chopped and seasoned, it comes sizzling with egg! Extra rice please! "Ang Pinaka" lists its Top 10 Iloilo Restaurants

It was a few months ago that I got wind that ANG PINAKA , one of the longest running shows on GMA News TV (even when it was still QTV), will finally be listing the Ang Pinaka Yummy Restos in Iloilo for its monthly food feature. Based on the info I got of their "eatinerary", I had the suspicion that my 2010 blogpost about the 13 Gastronomical Pitstops in Iloilo would play a big role in their list. And a few hours ago, I was right for I had 7 out of 10, though I can say 9, since during the time I made my own list, I have yet to discover the other two. So here's how the list went on... Degustation la Rue Bourbon

Following that afternoon of fine California wines, a degustation dinner followed at Bourbon Street. What else but only the best back ribs in town highlighted the evening’s 4-course menu. Together with the wine connoisseurs of Happy Living Philippines Corporation headed by Kathy Yao-Santos, learning about wine and their respective food pairing continues until the night. Dinner started with one of my fave soups at the American bistro – Cream of Mushroom and Celery. A rich blend of celery and mushroom flavored with basil and accented with chili. It was a night full of music, magic, dancing and delectable eats as B ourbon Street - home of the best ribs this part of the country, moves to a better and more upbeat location in Iloilo’s nightlife centrale. While the original branch is still open until the end of the month, the branch at The Avenue Complex still exhibits the Bourbon flair. Trendy yet formal setting that easily turns into a bar as the night deepens . The cool lighting fixtures on the ceiling and the bar were plus points too. The barrels act as both ornament and lighting diffusers giving the restaurant a modern rustic feel.
