Beef Liver: Bistek, Sisig and Cajun-style

There seems to be a beef liver festival in some restaurants in Iloilo City in the last few months. Almost every week, I see new beef liver dishes being advertised and I just couldn't say no these delectable gastronomic creations.
To start with, there's Beef Liver with Tagalog Sauce at Bauhinia Filipino Cuisine. Almost like the beef steak or bistek, so to speak, its taste is easily recognizable thus making it deliciously familiar. The sweet and sour mix of flavors in the sauce plus the caramelized onions blends just right with the taste of the liver.  
Here's another liver dish cooked in a very familiar way - Sizzling Sisig. A perfect pulutan whenever you find your self at Floyd's Famous BBQ restaurants, but as for me, its a viand with garlic rice. Chopped and seasoned, it comes sizzling with egg! Extra rice please! (Floyd's also serve Sizzling Liver Steak)
And if you want something of an international flavor then head to Bourbon Street Restaurant and Bar. There you'll tastebuds with be tickled by the Panfried Cajun Beef Liver in Mango-Tomato Salsa. A burst of flavour in evey bite as the cajun seasoning, thanks to Google, may contain the following: Paprika, Ground cumin, Salt, Garlic powder, Onion powder, Black pepper, Dried thyme, Dried oregano, Cayenne pepper, Cardamom, Caraway seeds, Dried basil, Filé powder, Dry mustard. And the fresh mango and tomato salsa gives this liver galore the exclamation point in taste!

K.B.L. or Kadyos, Baboy, Langka is the ultimate favorite dish of most Ilonggos. It is also one of the most missed native dishes as kadyos and the souring ingredient, batwan , are hard to find when outside of the Ilonggo region.  Basically, it is boiled/stewed pork dish owing its "deliciousness" to the combination of the soft and tender pork, the tamed sourness of  batwan  and the  malinamnam na sabaw .  One of the "secrets" of the malinamnamn na sabaw , is the fact that the pork, whether just the plain meat or pata (hocks) are first grilled or broiled. Batwan

Ilonggos know batwan or batuan by heart as the fruit is almost endemic to the Western Visayas. Its scientific name is Garcinia binucao, derived from the Tagalog name for the fruit, binukaw. It is a large green fruit with large seeds and its a favorite souring ingredient in most Ilonggo dishes especially  KBL or kadyos, baboy, langka and the Ilonggo-style paksiw known as "pinamalhan". It is characterized by a tamed sourness compared to tamarind and kamias . The fruit is sold by pieces or kilo in wet markets and even big grocery stores. Batwan is the preferred souring ingredients for the Ilonggo favorite- KBL. Lauya nga Pata sang Baboy

It was a typical fiesta scene in a barrio that I got to taste this cholesteroliffic and delicious pork dish. I can still vividly remember that decades old gastronomic memory - very tender and almost fall of the bone pata, vivid orange sour and sticky broth, large chunks of unripe  langka;  all in one big large  kaldero !  And it's been really a while since I've tried to recreate that taste memory and a few days ago, it was worth another try.
