There are many ways of making an Icebox Cake and its very simple to make. While the original Icebox Cake calls for wafers and whipped cream, Filipinos tweak the recipe using local biscuits and a variation of fruits as toppings.
Basically, it calls for a base that would serve as the "cake". The first icebox cake we made at home had broas as base. Later as the recipe "evolved" it became graham crackers and sometimes, chiffon cake baked or bakery bought. Just make sure that the cake is not so overwhelming in flavour so not as to contradict the over-all flavour.
The cream filling is just a mixture of cream and condensed milk though at times flavored with the type of topping. For example, a mango topped ice box cake (more popular as Mango Float), ripe mangoes are blended with the cream filling to give it more flavor and color.
And finally the toppings which most of the time are canned fruit cocktails but fresh fruits give it a more appealing flavor.
To make this no-bake icebox cake, just layer the "cake" and "cream" then pour more cream on top and topped it with fruits. Though you can also place fruits in between layers to make each each more festive.
To make an since cream sandwich style, use "whole" graham crackers (not the crushed ones.) Carefully and uniformly layer the crackers at the bottom. Then place in some fruit cocktails on top - make sure the bits of fruit dont take up 50% of the space. Pour in some cream to fill in the spaces. Then make another layer of graham, then place fruits bits then cream. Make 3-4 layers with the final layer just plain graham OR cream with fruits.
Freeze your creation overnight making sure it totally freezes, so just turn up your fridge higher than the usual. And when morning comes, you'll have a nice ice box cake ice cream sandwich style!
On special occasions, you can level up the design and taste by using fresh and exotic fruits like dragonfruit, kiwi, strawberries, mandarin oranges, grapes and more. And the broas or lady fingers don't only fill the cake but also makes an attractive border.
