Texas Pork Ribs and more at Mojave Grill and Steakhouse

 
Twice in a span of two weeks, I found myself enjoying the juicy and delectable Texas Pork Ribs from Mojave Grill and Steakhouse at The Avenue. I enjoyed the gastronomic experience the first and can’t wait to have another one. 
 But my actual first happened years ago during the 2010 Philippine Blog Awards hosted by The Venue wherein it was part of the sumptuous menu prepared for us.



But I hardly noticed it – the taste and everything, as we were all busy running here and there preparing for the awards program. 
So it was almost a month ago that I reconnected with the Texas Pork Ribs that I got to savour every morsel of it, polishing off every meat on the rib.


Now who can blame me, as it was deliciously good, soft and tender, seasoned just right and exuding a lot of good flavour. It’s now my default order at every time I’ll find my self at Mojave.
 But I won’t say no to their Grilled Tuna as cubes of perfectly seasoned and pan seared tuna resting on a seasoned tomato "concasse". It’s a healthy pick for it’s tuna and grilled plus tomatoes. What more can you ask for?
Maybe an Apple-Potato Salad that comes with lots of lettuce, marble potatoes, tuna, apple and grapes in special vinaigrette. A dose of organic fruits and vegetables in a plate!
Loading us with carbo were Baked Potato with Mozarella and Macaroni and Cheese.


The former gave us an almost quartered potato that oozed with lots of mozzarella while the latter a cheesy concoction mixed with penne pasta.


 And finally, their house blend Iced Tea capped the whole night of savouring sumptuous food and good company - only at Mojave Grill and Steakhouse.

Ultimate Ilonggo Favorite: KBL Kadyos, Baboy, Langka

K.B.L. or Kadyos, Baboy, Langka is the ultimate favorite dish of most Ilonggos. It is also one of the most missed native dishes as kadyos and the souring ingredient, batwan , are hard to find when outside of the Ilonggo region.  Basically, it is boiled/stewed pork dish owing its "deliciousness" to the combination of the soft and tender pork, the tamed sourness of  batwan  and the  malinamnam na sabaw .  One of the "secrets" of the malinamnamn na sabaw , is the fact that the pork, whether just the plain meat or pata (hocks) are first grilled or broiled. The gabi (taro) is just one of those plants which is edible from "roots to tops". The most popular of which is the tuber part which is used in a variety of dishes and mostly in combination with coconut milk. Its leaves, of course, is the main ingredient of a Bicol specialty, laing . It is dried then chopped and sauteed with other ingredients including, again, coconut milk. Then there is takway . The local term for its tendrils/runner, that part which is torn between being a stem or a root for it neither grows upwards nor downwards - it grows sideways . Scraped off of its outer skin, takway is often a key ingredient in vegetable dishes like laswa and the gabi tuber with coconut milk and local snails know as bago-ngon .
