Heavenly desserts at Maridel's


Just in case you've been living under a rock or inside a cave, let me tell about this great dessert place that everyone's talking about the past few months. It's a quaint little shop at Plazuela de Iloilo and it will make your sweet dreams do come true. Named after the master cakes and sweets artisan, Maridel Uygonco, Maridel's is finally here to satisfy every Ilonggos craving for homemade sweets, breads and desserts.
I've been there many times, having tasted more than a dozen of her specialties but I'll never forget my first time - Snickers Pie and Frozen Lemon Meringue. I had these two orders and finished them all by myself; while the two gals beside me that time had problems how to finish their individual orders -lol. These eventually turned out to be my personal favorite and Maridel's best sellers.
Now who can resist this Frozen Lemon Meringue? It's layers of meringue and vanilla ice cream filled with sweet lemon sauce/icing in a graham? crust. Refreshing is the best word to describe it especially on a hot day. The ice cream tastes great with the lemon icing giving it a play of flavours - tamed vanila then tangy-sweet lemon. The meringue gives it texture - looks heavy but melts in the mouth. It's among the best soft meringues I've tasted so far and this Frozen Lemon Meringue is my ultimate dessert at Maridel's.
Forget the chocolate bar you're familiar with and indulge in Maridel's sinful Snickers Pie. Filled with a peanut nougat, peanuts and caramel and embraced with milk chocolate - it's the chocolate bar that came to life. The name alone certainly catches your attention and when it's right there in front of you, you might forget your own name as you dig in and indulge in this sinfully gastronomic pie. No wonder it is among the best sellers at the quaint dessert shop named Maridel's.

Ultimate Ilonggo Favorite: KBL Kadyos, Baboy, Langka

K.B.L. or Kadyos, Baboy, Langka is the ultimate favorite dish of most Ilonggos. It is also one of the most missed native dishes as kadyos and the souring ingredient, batwan , are hard to find when outside of the Ilonggo region.  Basically, it is boiled/stewed pork dish owing its "deliciousness" to the combination of the soft and tender pork, the tamed sourness of  batwan  and the  malinamnam na sabaw .  One of the "secrets" of the malinamnamn na sabaw , is the fact that the pork, whether just the plain meat or pata (hocks) are first grilled or broiled. Bitso-bitso

What is bitso-bitso ? Also spelled/called bichu-bichu or bitsu-bitsu , this native delicacy is made with fried rice flour dough then coated with coconut cream and muscovado sugar syrup. Its like a combination of making palitaw and banacue . The rice flour based "dough" is usually twisted and deep fried. Then it is placed/cooked in a mix of muscovado sugar then dried out. The sugar then "re-crystallize" making a crisp coating for the fried rice flour. The result is a local delicacy that crisp and sweet in the outside yet chewy inside.  Cooking bitso-bitso is done many different ways and with different mixes of ingredients. These particular ones in Santa Barbara, Iloilo are still crisp even after being exposed - they are peddled every afternoon around town for 5 pesos a piece.
