Bluejay Coffee now brewing at the Ayala Techno Hub-Iloilo

Even until now, just looking at these photos, I still remember how overwhelmed I was when I first set foot inside the newly opened Bluejay Coffee at the Ayala Techno Hub in Mandurriao, Iloilo City. I was almost speechless seeing how sophisticatedly good it looked inside out.
It has the signature spherical decors made popular at the Amigo Plaza mall branch that adds "gravity" to the interiors. The airconditioned (non smoking area) is separated with glass panels with supports that looks like twiggy branches spreading all throughout thus hiding the exposed ceiling. The spheres also then looks like fruits from this angle.
The area (from which this photo was taken) serves as the smoking area which is very well ventilated - with fans and another sliding door that also serves as a floor to ceiling window. It has three areas; the Techies/singles over those green stools can conveniently place the gadgets on the table while enjoying their orders. The typical coffeeshop fixtures of dark brown chairs and tables, however, dominates area and one can have a leisure coffee and/or dining time with these skeleton furniture - they are "slotted" all over.
But my favorite turns out to be the "Spiderman" corner with these fancy plastic chairs. Its this intricate looking-blazing red chairs that got my attention first that I stayed almost three hours in the area during the opening day. And it's also the preferred smokers area for its beside the big open door/window.
Going further inside brings us to the classy dark violet sofas perfect for lounging enjoying a perfect cup of coffee or dining your hearts out. It has "iconic" Bluejay 101 checkerboard (from their Amigo branch) as the centerpiece for the diners to see and enjoy.
But ofcourse, the display of desserts and sweets would be first in mind. I noticed they already have those square versions of some of their desserts. Yet, I already had my eyes on their ensaymada which went well with the Americano I had then.
Looking back, literally that is, one can see the scope of how big and stylish the newest branch of Bluejay really is. From the airconditioned area to the non smoking area to the al fresco seats located at the doorsteps - its really why I was rendered speechless. And to think they weren't yet yet for that openign day as revealed by Ms Arlene Juantong, owner of Bluejay.
As the night settled in, I was there around 4pm and got out past 8pm, it got even better as it brightened that part of the area enticing more customers to have a taste of not only their food and drinks but the ambiance this new branch can offer.
Indeed, from the initial plans of this new branch as revealed by Ms Arlene, months ago, all was worth waiting for as finally Bluejay Coffee opens in style and with style with it's new branch at the Ayala Techno Hub!

Mama's Kitchen and Sinamay House in Arevalo

A stones throw away from the plaza of La Villa de Arevalo is an ancestral house where one can find not only good pasalubong items but also a look into the past of the district. Known as the Sinamay House , this well preserved ancestral house is an attraction not only in the outside but also what it houses inside. A collection of what the past like is housed in the two storey edifice which also acts like a museum of sorts. Sinamay is simply known as abaca by most and, here, a variety of products made from this fiber can be found.  I remember watching a feature on tv wherein the owner proudly showed a framed letter signed by the late Princess of Wales, Diana, showing her appreciation of the handkerchief she was given as a gift coming from this very shop. But the attraction I am most familiar with are the chewies and crunchies made by Mama's Kitchen. Attractively packed in boxes showing their current flavours and variety, this is among the better...

Ultimate Ilonggo Favorite: KBL Kadyos, Baboy, Langka

K.B.L. or Kadyos, Baboy, Langka is the ultimate favorite dish of most Ilonggos. It is also one of the most missed native dishes as kadyos and the souring ingredient, batwan , are hard to find when outside of the Ilonggo region.  Basically, it is boiled/stewed pork dish owing its "deliciousness" to the combination of the soft and tender pork, the tamed sourness of  batwan  and the  malinamnam na sabaw .  One of the "secrets" of the malinamnamn na sabaw , is the fact that the pork, whether just the plain meat or pata (hocks) are first grilled or broiled. This gives the broth a rather smoky taste that makes it more appetizing.. Learn how to make the Ilonggo dish KBL (Kadyos, Baboy, at Langka) with the recipe below. Ingredients 1 kilo Pata (pork hocks) or pork cubes, GRILLED and sliced into bite size pieces  1 unripe Jack fruit, cubed 2 cups pigeon pea (kadyos) 6-8 pieces batwan fruit  (or tamarind powder) 1 piece por...

Easy Century Tuna Recipes

If you're looking for simple, easy  and delicious Century Tuna recipes online, congratulations, you've found it right here! How about spicy tuna sisig or tuna sinigang ? Maybe stir fried tuna with pickles or just yang chow fried rice .  I love Century Tuna from its flakes in oil variety, the spicier the better, but when I discovered the versatility of its solid variant, it became an obsession. At first I was just into the usual tested recipes; pasta and sandwich filling, but then it got simpler – I just eat it straight from the can! Usually with a piece of bread or an apple. I just add a few drops of vinegar to spice it up a bit. Then came the experiments. Yup I got tired of that habit that one day, I decided to test my skills in the kitchen. Serendipity, you might call it yet most of them turned into good recipes that I have shared now and then. Satisfying my Palabok cravings had me experiment on this recipe on the spot. With Century Tuna in lieu of the us...
