Kadyos are round native black eyed-beans that are slightly bigger than monggo beans. High quality kadyos beans are those with deep shades of purple. Often ssociated with the Ilonggo favorite K.B.L. ( being the "K", baboy and langka), these beans turn the broth of any dish into having shades of purple.
Which reminds me of an anecdote:
"A household help was asked why lunch was late. She explained just kept on changing the "dirty" broth until it became clear so that took most of her cooking time. Then to everybody's surprise she served KBL with a clear broth"
Batuan is a round fruit of a forest tree native to the Visayas . Its scientific name is Garcinia binucao, derived from the Tagalog name for the fruit, binukau.
A large green fruit with large seeds, its a favorite souring ingredient in most Ilonggo cuisine especially in KBL and dried paksiw known as "pinamalhan".
A favorite riddle when we were young:
"Among the many fruits in the forest, but one (batuan) is the best. What is it?"
