
Last Lenten season, I had a
galore of bingkas I got from the town plaza, this
Fiesta Minatay; it’s time for
baye baye. Good thing our town,
Sta. Barbara and the adjacent town of
Pavia share a baranggay noted for delicious
baye baye - C
abugao Sur. With rows of stalls selling freshly made
baye baye everyday, the choices are almost endless, one will find it hard to choose the best.

And that’s exactly what I did - bought
baye baye from different makers and make my choice from the three brands. The lightest in color is from
Dieg’s Malones and my personal choice for being the best among the three. Looks and tastes clean - the rice may not have been over toasted or they just used white sugar. Next is
Angel’s, which prior to this taste test, had my vote for being one of the best I have tasted but I was quite disappointed. It still tasted good just below expectations. And last is
Onyok Jaspe’s, there were around two or more
baye baye with the “
Jaspe” brand just different first names though. This one was my least favorite though still within the good range, it’s just others tasted better.

Next time, I’ll try other brands of
baye baye but I won’t wait for the next
Fiesta Minatay to taste them. And by then, I won’t have to make a taste test – I know and will buy the best!
