This is another example of what I call blog-impulse-buying. I planned on getting my favorite grilled kilawin but saw this one instead so I changed plans right on. From Ilonggo forums to blogs, lutik is almost a staple item so it was in my to-blog list but never had the chance because of its unavailability at home.
Luckily, it presented itself today so I grabbed the chance. Only outshone by ginataang tambo as the most popular gata-based Ilonggo dish, lutik is not often prepared on ourt able as the tambo. Basically it's made of kalabasa and gata with other optional ingredients for garnishing and subak.
I had an amusing photo shoot for this one since when I placed this in a bowl it was not very photogenic. So piece by piece I got the kalabasa out then scooped out the gata. I mashed some deformed kalabasa to have a better looking sabaw then placed the beans, shrimp and garnished using the malunggay leaves. It was a fun last minute light-bulb-moment to get better looking photos!
Inday Hami of iLOVEiloilo has a great feature on this classic Ilonggo dish.
